Gluten Flakes and Gluten Shreds are both made from 100% USA grown and developed wheat protein flour. We do not use cheap flour imported from developing countries that may have food hadling regulations that are less stringint than those in the USA. Both the DARK & LIGHT are 100% wheat protein with the exception of the DARK being colored by mixing the wheat protein with caramel coloring.
